Bajan Chicken (Barbados)

My friend Natalie and I became friends in college.  We studied at the University of Minnesota, and we both were on the Track & Field Team. She was from Barbados and I was from New York. After college she moved back to Barbados and I moved back to New York. We reconnected via Facebook after many years. Long and behold, 18 years after college;  I took my first trip to Barbados to visit her, and see the beautiful island she was from. I  traveled to Barbados the past 3 years, because I can't get enough of the island. I have had the Time of My Life! Honestly, I believe this is my favorite island thus far. What makes this island so amazing? ---The People!

 You can find amazing beaches, great night life, and tourist attractions most places you go..  But in Barbados, the people are absolutely wonderful. Very friendly, very safe place to be, very relaxed, and just wonderful! I often envision myself living there.

  I just came back from a 16 day trip to Barbados. I stayed in St. Thomas (where Natalie Lives- I stayed in her rental apartment).  It was Crop Over time (Carnival). We went to many Fetes (Parties). One was called Soca Royale. This is where the local artists compete for the best artist/ song of the season. I'm not exactly sure how many people were there, but probably close to 20,000. It's a picnic party. You bring your own food, chairs and drinks.  The night before we were making salad and chicken to bring to Soca Royale. Our other friends were making MacPie, Potato Salad, and Pickled Cucumbers.

This is when I took notes of how Natalie made her amazing chicken.. I watched her make it, and asked a thousand questions of what she was doing. This chicken is incredible!! And I am going to share the recipe with you. I made it tonight, and it came out exactly how she made it :)

Bajan Chicken


Ingredients:

1 lime
Salt
3 tbsp- Barbados Greeen Seasoning (this can be bought in any local Bajan or Caribbean store)












8-10  Chicken Drum Sticks
1 tbsp of Your favorite BBQ Sauce
1 tbsp Honey
1 tbsp Yellow Mustard
1.5 tbsp ketchup
1.5 tbsp Curry powder
1/2 tsp Garam Masala
1/2 tsp cumin
1tbsp paprika
2 tsp salt

Instructions:

In a large bowl, put the chicken in and sprinkle one tsp of salt & squeeze the lime all over it. Rub the raw chicken all over in the salt and lime and let sit for not more than 10 minutes.  Then rinse the chicken off in cold water.  Add the dry ingredients (including 1 tsp salt). Mix well with your hands all over the chicken in the bowl. Then add the BBQ sauce, Mustard, Ketchup and 2 tbsp of the Bajan Green Seasoning.  Mix well, your hands will bet messy (don't worry, it will be worth it)!   Then take 1 Tbsp of the Bajan Green Seasoning and poke a hole in the chicken drum stick and stuff a little seasoning inside each one. You can poke a hole in the chicken easily with your finger close to the top of the bone (very easy).  Let the chicken marinate over night covered. If you are on the fly, it is just as good baking right after:)


Directions:

In a large baking pan, grease the pan with olive oil. Place the chicken in the pan and add all the extra seasoning on top.  Bake at 350 for 1 hour.   Cover the chicken for 40 minutes and then turn then chicken and bake or 20 minutes uncovered. Turn the chicken after 15 minutes. It will look like it is falling apart, that is how you know it is done:)  Serve with the additional sauce in the pan.  Enjoy!
