Broccoli Cheese Pie
One of my new year resolutions is to do "Meatless Mondays". This means that I won't eat meat on Mondays. I created this vegetarian entree from reading a few different recipes and putting my own twist on it. It is wonderful. I would like to say that the pie crusts I bought today were very small. This is why I had to use both of them. If you buy a regular size pie crust or use a pie dish, this recipe should fit into one just perfect. Buying a pie crust saves a lot of time, but I do recommend making your own. There is nothing better than homemade :) This dish goes great with a tossed salad, and is very satisfying.
Ingredients:
1 large head of broccoli chopped
4 garlic cloves pressed
1/2 sweet onion diced
salt and pepper to taste
1/4 cup milk
2 eggs
1 heaping cup of shredded cheddar cheese (the more the merrier)
2 small sweet potatoes
olive oil
Directions:
Preheat oven to 375. Boil the sweet potatoes, and dice them. Set aside. In a skillet, saute the garlic, onion and broccoli in olive oil. Season with salt and pepper. Make sure you chop the broccoli into small pieces (much easier to eat). In a large bowl, combine the cheese, broccoli mixture and the sweet potatoes. Mix well together. The cheese will start to melt and the broccoli will fall apart with the cheese. That is perfect. Scoop the mixture into the pie crust. Make sure you don't over fill the pie dish because it will spill over when it is baking. Mix together the eggs and milk. Drizzle over the top. You will see it fill in the edges of the pie. Bake for 30- 40 minutes uncovered.
