Bacalao over Yucca
About five years ago, I was a homebound teacher in Mount Vernon. Around 5:30, as the lessons were coming to a close, I would smell wonderful aromas coming from the kitchen. I finally asked the mother what she was making the family for dinner. To my surprise, she showed me how she made the meal and packed me a container to take home. It was outstanding! I have made this dish from that day on. I chose to have my Bacalao over Yucca, but it can go over anything. (Potatoes, Yams, Batatas etc.)
Bacalao is dried, salted, cod fish.
Yucca Root is often called Cassava. It is a native food of South America and consumed in the Caribbean, Asia, and Africa. Yucca is a starchy vegetable and is a great source of Vitamin A,B,C and Carbohydrates. It also has many health benefits. Recipe:
Ingredients:
1 large Yucca Root
1 pound Bacalao
1 Green Pepper
1 Sweet Onion
6 Plum Tomatoes
6 Garlic Cloves
Olive Oil
1 Tbsp. Tomato Paste
Directions:
Bacalao has 2 soaking methods.
1. Soak for 24 hours in cold water. Rinse and change the water two times to remove excess salt.
2. Place fish into a large pot with cold water. Bring to a boil, and then transfer the fish to a large bowl of cold water and let it soak for 3 hours in the refrigerator.
Peel the Yucca and cut into 4 pieces (they should appear like whole small potatoes). Boil the Yucca in a large pot of water until tender (approx. 40 minutes).
Meanwhile, pour oil into a large pot and saute the chopped green pepper, pressed garlic, sliced plum tomatoes, and chopped sweet onion. Add the tomato paste when everything is sautéed. Add the Bacalao and use a large cooking spoon to break the fish up into small shredded pieces. This fish falls apart quickly with minimal work. Cook all together for about 10 to 15 minutes until the fish is mixed well with the other ingredients.
Place the cooked Yucca in a bowl or plate and scoop the bacalao mixture over the top. Buen Aprovecho!!
