Red Lentil Soup

Red lentils are not only great tasting and a staple food in Middle Eastern cooking, but they are very nutritious also. These lovely little lentils are a great source of protein,fiber,iron, anti-oxidants,magnesium,and Vitamin B.  I was in the mood for Red Lentil Soup today. I googled many recipes and decided on one that was featured in the NY Times. The soup was smelling quite nice as it was simmering on the stove, so I had a sample. Bland!  Now what to do? There was no way I was going to be able to eat bland soup for the next three days and I wasn't about to discard it.  Nothing else to do, but open up the trusty spice cabinet and started adding a little of this and a little of that. I sampled the soup again, and it was getting better. I added another splash of this and a splash of that. Voila!!! Bacalao over Yucca

About five years ago, I was a homebound teacher in Mount Vernon. Around 5:30, as the lessons were coming to a close, I would smell wonderful aromas coming from the kitchen. I finally asked the mother what she was making the family for dinner. To my surprise, she showed me how she made the meal and packed me a container to take home. It was outstanding! I have made this dish from that day on. I chose to have my Bacalao over Yucca, but it can go over anything. (Potatoes, Yams, Batatas etc.) Bacalao is dried, salted, cod fish. Yucca Root is often called Cassava. It is a native food of South America and consumed in the Caribbean, Asia, and Africa. Yucca is a starchy vegetable and is a great source of Vitamin A,B,C and Carbohydrates. It also has many health benefits. Crock Pot Whole Chicken

This is my first recipe I am posting. This dish was inspired by Barefoot Contessa's ginger chicken recipe. It is very easy and delish! Ingredients for Marinade:  3/4 cup Soy Sauce (low sodium-otherwise it will be very very salty) 1 cup Honey 1 tbsp. Sesame Seeds 4 tsp. Ground Ginger 4 pound Whole Chicken 6 Garlic cloves pressed Directions:  Wash the chicken with water and lemon, then place it in a large bowl. In a small sauce pan combine all the ingredients and warm until the honey gets very soft and not clumpy. Pour the marinade over the chicken. Place the chicken in a large zip lock bag and add the remaining sauce to marinate overnight. In the morning place the chicken and the marinade in the crock pot and cook on Low for 7 hours.
